ambai is a brand devised by Makoto Koizumi, a designer with a reputation for carefully crafting items who is involved in the design of all kinds of items related to daily life from chopsticks to architecture. ambai items are finely crafted within Japan. An association of creators and designers make full use of regional features and skills finely toning the performance, materials, shape etc of an item. In this way, ambai aims to make items that are good for the user.
Iron has high storing ability, making for a well-rounded, delicious cooking result. The surface of the iron has uneven fiber-line processing. Iron's weak point is that foods stick to it. With this item, sticking has been suppressed as much as possible for easy handling. Oil functions well on it so there is no need to coat it with oil. 2-3 eggs can be used in this square shaped pan for making tamagoyaki making it perfect for cooking a small amount for breakfast or a lunch box.

This may cause a fire. *Do not heat while empty. This may cause a fire. *This is for cooking. Do not use for any other purpose. *Read instruction manual well before use and be sure to store it. *The instruction manual is for the Japanese market. *The instruction manual is in Japanese. *Use cookware that is appropriate for its application. *Do not wash in a dishwasher. *Do not use in a microwave. *Definitely do not heat while empty. *Use so that the flame doesn't extend from out the side of the pot base. This may cause a fire, ignite oil etc. It may also burn the handle and cause breakage. *Adjust handle position so that it is not in contact with the heat from a nearby flame. This may cause item breakage, a burn or other accident. *Do not fill with oil, food etc to the edge. Be careful not to snag the handle with your hand, clothing etc. *Do not suddenly cool by placing in cold water while still hot. This may cause deformation of the base. The pan and handle will become hot during and after cooking. There is a risk or burning yourself so do not touch with bare hands. Use a pot gripper etc. Place out of reach of children so that they are not able to touch it. *If there is an abnormality such as damage, a dent, bending, looseness etc on any portion, do not use. *Do not use for any purpose other than its intended one. [Before using] *Check that the handle attachment isn't loose before using. Wash well with kitchen detergent before using for the first time. *It is recommended that you coat with oil before using for the first time. How to coat with oil (for a gas cooker) *Do not cool with cold water after heating as it will cause deformation. 1. Heat using a glass flame for 2-3 minutes and temporarily turn off heat. *Heat at low/medium heat making sure the flames do not extend out from the sides of the base. 2. Cool to a temperature where you can touch it with your hand. 3. Add approx. 0.5 to 1 cup (for a tamagoyaki pan or small frying pan, 0.25 to 0.5 is good) of oil and spread around pan. Heat on low heat for 3 minutes. When oil has blended in evenly throughout, return excess oil to oil pot. 4. Using kitchen paper, wipe to blend in oil evenly on the inside of the pan. *When not using, wipe the outer side of the frying pan/tamagoyaki pan in the same way. [In order to use safely] *Do not use a frying pan/tamagoyaki pan to fry tempura and other fried foods. The oil may catch fire. *Make soup in a frying pan/tamagoyaki pan: Oxide film early stage peeling and rust may lead to rust due to the salt content and so it is not recommended. *When you have finished cooking, quickly transfer food to another container and promptly wash the pan. After washing, heat to remove moisture, apply a think layer of oil and store. [About surface coat] *For the purpose of preventing rust until delivery, the black inner side has a black color oxide film to protect the surface. This surface also has a silicone resin coating. Sooner or later while uses, it will peel off and the whitish silver colored iron coat will be exposed. Along with the food that goes in your mouth, this is harmless. Please rest assured that the coat used conforms to the Food Sanitation Law. *The black oxide film will come off at some time. This is due to highly acidic and alkaline foods (tomatoes, citrus fruit, umeboshi etc), seasonings (vinegar, ketchup, Worcester sauce, wine, plum, soy sauce), tannins in foods with lots of lye (lotus root, burdock, edible wild plants, spinach, eggplant, beans etc) chemically reacting with the iron, creating tannin iron. At this time, the black oxide film will come off. *When the oxide film peels off, cooked items will become darkened. However, there is no impact on taste and it will not harm your body. Even if the black oxide film peels off and reveals the whitish iron skin, if you continue to care for it before and after use, it will not be a problem. [Precautions when using a cooking heater] *When using on a 200V or 100V electromagnetic cooker, be sure to read your cooker's instruction manual. Depending on the device, you may not be able to use it. *200V electromagnetic cooker: They heat pots to a high temperature quickly after turned on. For a little bit of oil, ignition temperature will be reached in 30 seconds. Due to this, when stir-frying in a little oil, please set heat to low or medium so that the oil temperature does not rise more than necessary. *200V electromagnetic cooker: Do not heat when there is nothing in the pot. This may cause deformation and damage to your cooking appliance. *When cooking with an electromagnetic cooker, strange sounds may occur. This is resonance created by factors related to the pot weight & position, content weight and heating state. If this occurs, changing the pot position and lowering heat will alter the vibration condition, and so the sound may stop. [How to cook well using an electromagnetic cooker] Heating unevenness occurs easily in electromagnetic cookers. Please do the following to reduce this unevenness. 1.Before switching it on, put in enough oil to cover the whole base of the frying pan/tamagoyaki pan. 2.Start on "low" heat and warm for approx. 2 minutes. Gradually increase to "medium" and "high". When you see oil make, return excess oil to the oil pot. 3.Add a suitable amount of oil, select the suitable heating power (medium or less is fine, be sure to use low for tamagoyaki) and then start cooking. [Regarding Care/Storage] *After use, remove stains etc with hot water while still warm. After removing moisture with gas heat, apply a thin layer of oil and store. *Definitely do not leave soaked in water. This will cause rust and deterioration of the handle. *Do not store food in it for a long time. This will cause rust. Move food to another container and store. *Storing while wet or dirty will cause rust so do not do so. *Should rust occur, rub with a polishing powder to remove. *Try your best to avoid storing in a high place. There is a chance it may fall down. *Should the handle be loose, tighten screw. *Should handle looseness not be fixed, refrain from use. [Other] *Can be used over an open flame and on an induction cooker. *Should there be no stock, item manufacture will take place after order placement. Depending on the item, delivery may be delayed.
