ambai is a brand devised by Makoto Koizumi, a designer with a reputation for carefully crafting items who is involved in the design of all kinds of items related to daily life from chopsticks to architecture.
ambai items are finely crafted within Japan. An association of creators and designers make full use of regional features and skills finely toning the performance, materials, shape etc of an item. In this way, ambai aims to make items that are good for the user.

Utilizing the techniques of Seki, Gifu Prefecture, a cutlery production area with a history of around 780 years, a pleasant feeling in the hand, ease of use and superb sharpness of realized.
A small, versatile knife that can be used for peeling fruit, vegetables etc. An easy-to-operate, handy knife with a finely shaped blade and handle angle.
[Material]
The blade is made of highly durable molybdenum vanadium stainless steel. The handle is made of durable, pleasant-feeling laminated reinforced wood. Also, the handle has been designed so that it is easy to grip and will not tire you. The blade has been mounted onto it using a new method which utilizes Japanese sword-making techniques. With an original finish, gentle on the hand and in a shape that dirt doesn't stick to easily.

[Handling Precautions]
*Do not use for anything other than cooking.
Please take care that the blade doesn't become cracked from daily use. Should it become cracked,​ it will cause chipping or breakage regardless of usage time. Should it be broken or deformed,​ do not use.
*Use a knife for its correct purpose. When cutting frozen food,​ tough food with bones etc,​ the blade may chip,​ crack or break,​ so use a special knife to do so.
*The blade edge is very thinly sharpened,​ so do not use like a machete or forcefully move sideways. (The blade may chip.)
*The wood handle picks up moisture easily,​ so wipe off moisture properly. Using for a long time may cause cracking and deformation so exchange as soon as possible.
*Chlorine-based disinfectant and bleach cause rust.
*Be sure to use a cutting board.
*Do not put knife over an open flame.
*Do not use in a dishwasher or dish-dryer.
*Make sure that children use this in the presence of a guardian.
*Store in a safe place after use.
*Sharp knives lose their sharpness over time. Sharpen approx. once a month.
*Do not use for any purpose other than its intended one.
[Daily Care]
*Wash with kitchen detergent before use.
*When cleaning with a sponge,​ do not rub the blade edge. (Do not use a metal scourer.)
*Leaving water and dirt attached to stainless steel knives will cause rust.
*After use,​ remove adhered stains right away with kitchen bleach or powdered cleanser and boiled hot water. The blade and handle joint especially collects dirt,​ so wash properly here. By washing with hot water,​ moisture will evaporate.
*Finally,​ wipe off moisture from blade and handle with a dry cloth,​ dry and store.
*If you will not use it for a long time,​ remove dirt properly with cleanser after use,​ dry,​ wrap in a newspaper and then store in a place that isn't humid.

*As each item is hand-made individually,​ the color and shape may differ slightly from the photos,​ and the measurements may vary slightly too.
